Calling All Chocolate Lovers

A couple of years ago, my mom enrolled us in a Mexican themed cooking class. The menu included: chicken quesadillas, guacamole, baked tortilla chips, and brownies. I remember thinking, “Brownies are a Mexican food?” It wasn’t until our instructor told us that the brownie recipe was actually made with black beans instead of flour.

I decided to tweak the recipe this morning by adding in a few more chocolate chips. I must say, these brownies will melt right in your mouth. Here is the recipe I used:

Ingredients:

1        can (15 ounces) black beans, rinsed and drained

½       cup semisweet chocolate chips, divided 

3        tablespoons canola oil (I used vegetable oil, still turned out fine)

3       eggs

2/3    cup packed brown sugar

1/2    cup baking cocoa

1        teaspoon vanilla extract

½        teaspoon baking powder

1/8     teaspoon salt

Directions:

  1. Combine beans, chocolate chips and oil in a food processor (I used a Vitamix blender). Process until blended.
  2. Add eggs, brown sugar, cocoa powder, vanilla, baking powder, and salt. Process until smooth.
  3. Transfer to a parchment paper-lined 8 inches. square baking pan.
  4. Sprinkle ¼ cup chocolate chips on top of the mixture (optional)

Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Cut into squares. Enjoy!

P.s. This recipe pairs nicely with a tall glass of milk…just sayin’ 😉

    1. Yes, very interesting. I must admit, I was a little contemplative about them at first. But after trying them, I don’t think I’ll ever go back to a traditional brownie recipe. They are very moist, almost to the point where they fall apart but they melt right in your mouth 😊
